DOUGH

  • 1 cup Wheat flour
  • 1/4 cup Sorghum flour
  • 3/4 cup Water
  • 1 pinch Salt
  • 1/2 sachet Saf-instant yeast 11g
  • 1 1/4 tbsp Sugar
  • 1 tbsp Margarine
  • 8 tbsp Grated coconut

Pour the lukewarm water into a large mixing bowl and mix in the yeast.

Add the wheat flour, sorghum flour, salt, sugar, softened butter or margarine and coconut

Mix until the dough has an even consistency. Knead for 5 minutes.

Shape the dough into a ball. Leave to rest for 2 minutes

Roll the dough out into a rectangle and cut it into 8 equal pieces

Put the pieces on a tea towel and leave to rest for 45 minutes.

Heat the oil over a medium heat and fry the pieces until they are golden on both sides

Remove from the oil and drain on kitchen paper
